Description

Eggs Benedict is a classic American breakfast dish that consists of poached eggs, Canadian bacon, and hollandaise sauce on an English muffin.


Ingredients

  • 2 English muffins (split in half)
  • 4 slices Canadian bacon (or ham)
  • 4 eggs (fresh)
  • 1 tablespoon white vinegar (for poaching eggs)
  • 1/2 cup butter (unsalted)
  • 3 egg yolks
  • 1 tablespoon lemon juice (freshly squeezed)

  • for garnish chives (chopped)

Instructions

  1. Fill a large pot with water and add white vinegar. Bring to a gentle simmer.
  2. In a separate pan, cook Canadian bacon over medium heat until warmed through. Remove from heat and set aside.
  3. Crack each egg into a small bowl. Gently slide each egg into the simmering water. Poach for about 3-4 minutes, or until the whites are set and the yolks are still runny.
  4. While the eggs are poaching, prepare the hollandaise sauce. In a heatproof bowl, whisk together egg yolks and lemon juice until pale and thick.
  5. Place the bowl over a saucepan of simmering water (double boiler). Slowly whisk in melted butter until the sauce is thick and creamy. Season with salt and pepper.
  6. To assemble, toast the English muffins until golden brown. Place a slice of Canadian bacon on each half, then top with a poached egg.
  7. Drizzle hollandaise sauce over each egg and garnish with chopped chives. Serve immediately.

  • For perfectly poached eggs, make sure the water is at a gentle simmer, not boiling.
  • You can substitute the Canadian bacon with smoked salmon for a variation.
