Description
Eggs Benedict is a classic American breakfast dish that consists of poached eggs, Canadian bacon, and hollandaise sauce on an English muffin.

- 2 English muffins (split in half)
- 4 slices Canadian bacon (or ham)
- 4 eggs (fresh)
- 1 tablespoon white vinegar (for poaching eggs)
- 1/2 cup butter (unsalted)
- 3 egg yolks
- 1 tablespoon lemon juice (freshly squeezed)
- to taste salt
- to taste black pepper (freshly ground)
- for garnish chives (chopped)
Instructions
- Fill a large pot with water and add white vinegar. Bring to a gentle simmer.
- In a separate pan, cook Canadian bacon over medium heat until warmed through. Remove from heat and set aside.
- Crack each egg into a small bowl. Gently slide each egg into the simmering water. Poach for about 3-4 minutes, or until the whites are set and the yolks are still runny.
- While the eggs are poaching, prepare the hollandaise sauce. In a heatproof bowl, whisk together egg yolks and lemon juice until pale and thick.
- Place the bowl over a saucepan of simmering water (double boiler). Slowly whisk in melted butter until the sauce is thick and creamy. Season with salt and pepper.
- To assemble, toast the English muffins until golden brown. Place a slice of Canadian bacon on each half, then top with a poached egg.
- Drizzle hollandaise sauce over each egg and garnish with chopped chives. Serve immediately.
Notes
- For perfectly poached eggs, make sure the water is at a gentle simmer, not boiling.
- You can substitute the Canadian bacon with smoked salmon for a variation.
