Instructions

- Dredge each eggplant slice in flour, shaking off the excess.

- Coat the eggplant slice in the breadcrumb mixture, pressing gently to adhere.
- Place the coated eggplant slices in a single layer in the air fryer basket. Lightly spray them with olive oil.
