Description

Ingredients

  • 4 large eggs
  • 1/2 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 2 jalapeños, diced
  • 1 small onion, diced
  • 4 soft rolls
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Cook sausage in a pan over medium heat until browned. Set aside.
  2. In the same pan, sauté onions and jalapeños until soft.
  3. Whisk eggs, season with salt and pepper, and scramble in the pan with the vegetables.
  4. Add cooked sausage back to the pan and mix well.
  5. Split the rolls in half and lightly toast them.
  6. Fill each roll with the egg and sausage mixture.
  7. Sprinkle shredded cheese on top and close the roll.
  8. Serve immediately.
