Ingredients

- 4 large eggs
- 1/2 lb breakfast sausage
- 1 cup shredded cheddar cheese
- 2 jalapeños, diced
- 1 small onion, diced
- 4 soft rolls
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Cook sausage in a pan over medium heat until browned. Set aside.
- In the same pan, sauté onions and jalapeños until soft.
- Whisk eggs, season with salt and pepper, and scramble in the pan with the vegetables.
- Add cooked sausage back to the pan and mix well.
- Split the rolls in half and lightly toast them.
- Fill each roll with the egg and sausage mixture.
- Sprinkle shredded cheese on top and close the roll.
- Serve immediately.
