Ingredients

  • 4 large eggs
  • 1/2 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 2 cups frozen hash browns, thawed
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook sausage in a skillet over medium heat until browned. Drain excess fat.
  3. In a bowl, whisk eggs with salt and pepper. Cook scrambled eggs in the same skillet, then set aside.
  4. In a separate pan, heat butter and olive oil. Cook hash browns until crispy.
  5. Lay out tortillas or flatbread. Layer hash browns, scrambled eggs, cooked sausage, and cheese.
  6. Roll tightly, then place on a baking sheet. Bake for 10 minutes until cheese melts.
  7. Slice and serve warm.
