Ingredients

  • 1 package of egg roll wrappers
  • 2 cups of shredded cabbage
  • 1 cup of shredded carrots
  • 1 cup of cooked chicken, diced (or your choice of protein)
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. In a large bowl, combine shredded cabbage, carrots, cooked chicken, green onions, garlic, soy sauce, sesame oil, salt, and pepper. Mix until well combined.
  2. Lay an egg roll wrapper on a clean surface with a corner pointing towards you. Place about 2 tablespoons of the filling in the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.
  4. Preheat your air fryer to 380°F (193°C) for about 5 minutes.
  5. Spray the air fryer basket with cooking spray. Place the egg rolls in the basket in a single layer, making sure they do not touch.
  6. Spray the tops of the egg rolls with cooking spray.
  7. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  8. Remove from the air fryer and let cool slightly before serving.

Notes

  • For extra crispiness, make sure the egg rolls are not overcrowded in the air fryer.
  • You can customize the filling with your favorite vegetables or proteins.
