A healthier and quicker take on the classic Eggplant Parmesan, made crispy in the air fryer.
Ingredients

- 2 medium Eggplant
- 1 teaspoon Salt
- 1 cup Flour
- 2 large Eggs
- 1 cup Breadcrumbs
- as needed Olive oil spray
- 2 cups Marinara sauce
- 2 cups Mozzarella cheese
- 1/2 cup Parmesan cheese
- for garnish Fresh basil
Instructions
- Preheat the air fryer to 375°F (190°C).
- Sprinkle salt on the eggplant slices and let them sit for about 30 minutes to sweat out moisture. Rinse and pat dry.
- Dredge each eggplant slice in flour, dip in beaten eggs, and coat with breadcrumbs.
- Spray the air fryer basket with olive oil spray. Arrange the breaded eggplant slices in a single layer in the basket, spraying the tops with olive oil.
- Air fry for 12-15 minutes, flipping halfway through, until golden and crispy.
- In a baking dish, layer half of the air-fried eggplant slices, followed by half of the marinara sauce, and half of the mozzarella cheese. Repeat the layers with the remaining ingredients.
- Sprinkle the grated Parmesan cheese on top.
- Return the dish to the air fryer and cook for an additional 5-7 minutes until the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
