Description

A healthier and quicker take on the classic Eggplant Parmesan, made crispy in the air fryer.


Ingredients

  • 2 medium Eggplant
  • 1 teaspoon Salt
  • 1 cup Flour
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • as needed Olive oil spray
  • 2 cups Marinara sauce
  • 2 cups Mozzarella cheese
  • 1/2 cup Parmesan cheese
  • for garnish Fresh basil

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Sprinkle salt on the eggplant slices and let them sit for about 30 minutes to sweat out moisture. Rinse and pat dry.
  3. Dredge each eggplant slice in flour, dip in beaten eggs, and coat with breadcrumbs.
  4. Spray the air fryer basket with olive oil spray. Arrange the breaded eggplant slices in a single layer in the basket, spraying the tops with olive oil.
  5. Air fry for 12-15 minutes, flipping halfway through, until golden and crispy.
  6. In a baking dish, layer half of the air-fried eggplant slices, followed by half of the marinara sauce, and half of the mozzarella cheese. Repeat the layers with the remaining ingredients.
  7. Sprinkle the grated Parmesan cheese on top.
  8. Return the dish to the air fryer and cook for an additional 5-7 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh basil before serving.
