A deliciously crispy and cheesy eggplant parmesan made effortlessly in the air fryer.


Ingredients

  • 1 large eggplant, sliced into 1/4 inch rounds
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (Italian seasoned recommended)
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Cooking spray

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Sprinkle salt on the eggplant slices and let them sit for about 30 minutes to draw out moisture. Pat them dry with paper towels.
  3. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Italian seasoning.
  4. Dip each eggplant slice first in flour, then in the beaten eggs, and finally in the breadcrumbs, coating well.
  5. Spray the air fryer basket with cooking spray and arrange the breaded eggplant slices in a single layer. You may need to do this in batches.
  6. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  7. In a baking dish, spread a thin layer of marinara sauce. Layer half of the air-fried eggplant slices, followed by half of the marinara sauce, half of the mozzarella, and half of the Parmesan.
  8. Repeat the layering with the remaining eggplant, sauce, and cheeses.
  9. Air fry the assembled dish at 375°F (190°C) for an additional 5-7 minutes until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

  • Feel free to add additional spices to the breadcrumbs for extra flavor.
  • For a healthier version, you can skip the frying and bake the eggplant slices in the oven at 400°F (200°C) for 20-25 minutes.
