A deliciously crispy and cheesy eggplant parmesan made effortlessly in the air fryer.
Ingredients

- 1 large eggplant, sliced into 1/4 inch rounds
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (Italian seasoned recommended)
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Cooking spray
Instructions
- Preheat your air fryer to 375°F (190°C).
- Sprinkle salt on the eggplant slices and let them sit for about 30 minutes to draw out moisture. Pat them dry with paper towels.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Italian seasoning.
- Dip each eggplant slice first in flour, then in the beaten eggs, and finally in the breadcrumbs, coating well.
- Spray the air fryer basket with cooking spray and arrange the breaded eggplant slices in a single layer. You may need to do this in batches.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- In a baking dish, spread a thin layer of marinara sauce. Layer half of the air-fried eggplant slices, followed by half of the marinara sauce, half of the mozzarella, and half of the Parmesan.
- Repeat the layering with the remaining eggplant, sauce, and cheeses.
- Air fry the assembled dish at 375°F (190°C) for an additional 5-7 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add additional spices to the breadcrumbs for extra flavor.
- For a healthier version, you can skip the frying and bake the eggplant slices in the oven at 400°F (200°C) for 20-25 minutes.
