Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 cup corn
- 1 red bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 avocado, sliced
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until liquid is absorbed.
- Fluff quinoa with a fork.
- In a large bowl, mix black beans, corn, red bell pepper, cumin, chili powder, and salt.
- Add cooked quinoa to the bowl and stir to combine.
- Serve topped with avocado slices.
Notes
- Store leftovers in the fridge for up to 3 days.
- This dish can be served warm or cold.
