Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 avocado, sliced

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until liquid is absorbed.
  4. Fluff quinoa with a fork.
  5. In a large bowl, mix black beans, corn, red bell pepper, cumin, chili powder, and salt.
  6. Add cooked quinoa to the bowl and stir to combine.
  7. Serve topped with avocado slices.
