Ingredients

  • 4 cups vegetable broth

  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil.
  4. Add tortellini and cook for 7-8 minutes.
  5. Stir in diced tomatoes, spinach, basil, and oregano.
  6. Simmer for 5 minutes.
  7. Season with salt and pepper.
