A refreshing and colorful pasta salad perfect for summer dinners. This dish is light, flavorful, and can be made in under 30 minutes!
Ingredients

- 8 oz (225g) pasta (your choice)
- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1 cup bell peppers, diced
- 1/2 cup red onion, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumbers, bell peppers, red onion, feta cheese, and basil.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Serve immediately or chill in the refrigerator for an hour before serving.
Notes
- Feel free to add in other summer vegetables like zucchini or corn.
- This salad can be made ahead of time and stored in the fridge for up to 3 days.
