Ingredients

  • 8 oz (225g) pasta (your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumbers, bell peppers, red onion, feta cheese, and basil.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Serve immediately or chill in the refrigerator for an hour before serving.

Notes

  • Feel free to add in other summer vegetables like zucchini or corn.
