Ingredients

- 1 lb (450g) boneless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups mixed vegetables (bell peppers, zucchini, and corn)
- 1 cup cooked quinoa or rice
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken pieces with garlic powder, paprika, salt, and pepper.
- Add the chicken to the skillet and cook for 5-7 minutes, until browned and cooked through.
- Stir in the mixed vegetables and cook for an additional 5 minutes until tender.
- Add the cooked quinoa or rice to the skillet and mix well.
- Remove from heat, stir in lemon juice and fresh parsley.
- Serve warm and enjoy!
