Description
This healthy grilled chicken salad is a perfect easy summer dinner idea packed with fresh vegetables and protein. It’s light, refreshing, and can be made in under 30 minutes!

- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 6 cups mixed salad greens (spinach, arugula, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup feta cheese, crumbled (optional)
- Balsamic vinaigrette dressing
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Brush the chicken breasts with the olive oil mixture on both sides.
- Place the chicken on the grill and cook for 6-7 minutes on each side or until fully cooked (internal temperature of 165°F).
- Remove chicken from the grill and let it rest for 5 minutes before slicing.
- In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, and avocado.
- Top the salad with the sliced grilled chicken and sprinkle feta cheese on top if using.
- Drizzle with balsamic vinaigrette dressing before serving.
Notes
- Feel free to add any other vegetables you enjoy, such as bell peppers or carrots.
- You can substitute grilled chicken with grilled shrimp or tofu for a different protein option.
