This healthy grilled chicken salad is a perfect easy summer dinner idea packed with fresh vegetables and protein. It’s light, refreshing, and can be made in under 30 minutes!


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 6 cups mixed salad greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup feta cheese, crumbled (optional)
  • Balsamic vinaigrette dressing

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  3. Brush the chicken breasts with the olive oil mixture on both sides.
  4. Place the chicken on the grill and cook for 6-7 minutes on each side or until fully cooked (internal temperature of 165°F).
  5. Remove chicken from the grill and let it rest for 5 minutes before slicing.
  6. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, and avocado.
  7. Top the salad with the sliced grilled chicken and sprinkle feta cheese on top if using.
  8. Drizzle with balsamic vinaigrette dressing before serving.
