Ingredients

  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup cherry tomatoes, halved

  • 1 lemon, juiced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the zucchinis, red and yellow bell peppers, and cherry tomatoes. Drizzle with olive oil, salt, and pepper, and toss to coat.
  3. Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.
  4. In a small bowl, whisk together the lemon juice, parsley, basil, and garlic powder. Set aside.
  5. Once the vegetables are done, remove them from the grill and transfer to a serving platter.
