- 2 medium zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 lemon, juiced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 1 teaspoon garlic powder
- Cooked quinoa or rice, for serving
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the zucchinis, red and yellow bell peppers, and cherry tomatoes. Drizzle with olive oil, salt, and pepper, and toss to coat.
- Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.
- In a small bowl, whisk together the lemon juice, parsley, basil, and garlic powder. Set aside.
- Once the vegetables are done, remove them from the grill and transfer to a serving platter.
- Drizzle the lemon herb dressing over the grilled vegetables.
- Serve over cooked quinoa or rice for a complete meal.
