- 2 cups Fresh strawberries (hulled and sliced)
- 1/2 cup Granulated sugar (for macerating strawberries)
- 1 cup Heavy whipping cream (chilled)
- 1 teaspoon Vanilla extract
- 8 ounces Cream cheese (softened)
- 1 cup Graham cracker crumbs (for crust)
- 1/4 cup Butter (melted)
Instructions
- In a medium bowl, combine the sliced strawberries and granulated sugar. Toss to coat and let sit for about 30 minutes until the strawberries release their juices.
- In a separate bowl, beat the heavy whipping cream and vanilla extract until stiff peaks form.
- In another bowl, mix the softened cream cheese until smooth. Gradually fold in the whipped cream until well combined.
- In a small bowl, mix the graham cracker crumbs with melted butter until the crumbs are moistened.
- Press the graham cracker mixture into the bottom of a serving dish to form a crust.
- Spread the cream cheese mixture over the crust.
- Top with the macerated strawberries and their juices.
- Chill in the refrigerator for at least 2 hours before serving.
