Ingredients

- 1 cup cooked rice
- 1 chicken breast
- 1 ear corn (or 1/2 cup corn kernels)
- 1 tbsp mayonnaise
- 1 tbsp sour cream
- 1/4 tsp chili powder
- 1 tbsp lime juice
- 1 tbsp chopped cilantro
- 1 tbsp crumbled cotija cheese
- Salt to taste
- Pepper to taste
Instructions
- Season chicken with salt and pepper, then grill until cooked through
- Cut corn from cob and mix with mayonnaise, sour cream, chili powder, lime juice
- Slice cooked chicken into strips
- Assemble bowl with rice as base
- Top with chicken and corn mixture
- Sprinkle with cilantro and cotija cheese
Notes
- Use leftover rice for quicker preparation
- Substitute feta if cotija isn’t available
