Ingredients

- 2 cups of fresh spinach
- 1 cup of cherry tomatoes
- 1 cup of cooked quinoa
- 1/2 cup of feta cheese
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix spinach, tomatoes, quinoa, and feta.
- In a separate bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Transfer the mixture to a baking dish.
- Bake for 15-20 minutes until heated through.
- Serve warm.

- Feel free to add grilled chicken for more protein.
- Use any seasonal vegetables you like.
