- 1 can (14.75 oz) salmon, drained
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 1/4 cup finely chopped onion
- 2 tbsp chopped parsley
- 1 tsp lemon juice
- 1/2 tsp black pepper
- 1/4 tsp salt
- 2 tbsp oil for frying
Instructions
- Drain salmon and remove bones if needed.
- Mix salmon, breadcrumbs, egg, onion, parsley, lemon juice, pepper, and salt in a bowl.
- Shape mixture into small patties.
- Heat oil in a pan over medium heat.
- Fry croquettes for 3-4 minutes per side until golden.
- Drain on paper towels.
- Serve warm.

- Use fresh salmon instead of canned if preferred.
- Adjust seasoning to taste.
- Serve with tartar sauce or lemon wedges.
