- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1/2 red onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated parmesan cheese (optional)
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook for 5-6 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add onions, bell pepper, and zucchini. Sauté for 3-4 minutes until softened.
- Add garlic and oregano, stirring for 30 seconds until fragrant.
- Pour in orzo, balsamic vinegar, and chicken broth. Stir to combine.
- Return chicken to the skillet, nestling it into the orzo mixture. Bring to a simmer.
- Cover and cook for 10-12 minutes until orzo is tender and liquid is absorbed.
- Sprinkle with parmesan cheese and fresh basil before serving.

- Substitute chicken thighs for a richer flavor.
- Use vegetable broth for a vegetarian version.
- Add cherry tomatoes for extra freshness.
