Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated parmesan cheese (optional)
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet. Cook for 5-6 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add onions, bell pepper, and zucchini. Sauté for 3-4 minutes until softened.
  4. Add garlic and oregano, stirring for 30 seconds until fragrant.
  5. Pour in orzo, balsamic vinegar, and chicken broth. Stir to combine.
  6. Return chicken to the skillet, nestling it into the orzo mixture. Bring to a simmer.
  7. Cover and cook for 10-12 minutes until orzo is tender and liquid is absorbed.
  8. Sprinkle with parmesan cheese and fresh basil before serving.
