Instructions

  1. In a bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  2. Heat olive oil in a non-stick skillet over medium heat. Add the diced vegetables and sauté for 2-3 minutes until softened.
  3. Pour the egg mixture over the sautéed vegetables. Cook, stirring gently, until the eggs are set, about 3-4 minutes.
  4. Meanwhile, toast the bread slices until golden brown. Spread butter on each slice.
  5. Once the eggs are cooked, sprinkle the shredded cheese on top and let it melt.
