Instructions
- Preheat oven to 325°F (165°C). Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs, melted butter, and 1 tbsp sugar in a bowl. Press a small amount into each liner.
- Beat cream cheese, 1/4 cup sugar, and vanilla until smooth. Add egg and mix well.
- Spoon filling over crusts, filling each liner almost to the top.
- Bake for 15-18 minutes or until set. Let cool before serving.
