A comforting and hearty lasagna soup with all the flavors of traditional lasagna in an easy-to-make soup.
Ingredients

- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups chicken broth
- 1 (15 oz) can tomato sauce
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add the onion and garlic, cooking until softened.
- Stir in crushed tomatoes, tomato sauce, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add broken lasagna noodles and cook until tender, about 10 minutes.
- In a bowl, mix ricotta, mozzarella, and Parmesan.
- Serve soup hot with a dollop of cheese mixture and fresh basil.
Notes
- Use ground turkey for a lighter version.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
