Ingredients

- 8 oz pasta (penne or rotini)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup black olives, sliced
- 1/4 cup red onion, diced
- 1/4 cup bell pepper, diced
- 1/4 cup cucumber, diced
- 1/4 cup mozzarella cheese, cubed
- 1/4 cup Italian dressing
- 1 tbsp fresh basil, chopped
- 1 tbsp grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine pasta, cherry tomatoes, black olives, red onion, bell pepper, cucumber, and mozzarella.
- Pour Italian dressing over the mixture and toss gently to coat.
- Sprinkle fresh basil and Parmesan cheese on top.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving.
