Ingredients

- 2 cups mixed greens (lettuce, spinach, arugula)
- 1 cucumber, sliced
- 1 tomato, diced
- 1/2 red onion, thinly sliced
- 1/4 cup olives, pitted
- 1/4 cup feta cheese, crumbled (optional)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Wash and dry all vegetables.
- Chop the mixed greens, cucumber, tomato, and red onion.
- Combine all chopped vegetables in a large bowl.
- Add olives and feta cheese if using.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Drizzle dressing over the salad and toss gently.
- Serve immediately.

- For extra crunch, add toasted nuts or seeds.
- Replace feta cheese with avocado for a vegan option.
- Store leftovers in an airtight container for up to 1 day.
