Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 2 tbsp vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Optional: 1 cup cooked protein (chicken, shrimp, or tofu)

Instructions

  1. Heat 1 tbsp oil in a large pan over medium heat.
  2. Add beaten eggs and scramble until fully cooked. Remove and set aside.
  3. Add remaining oil to the pan. Sauté garlic for 30 seconds.
  4. Add vegetables and cook until tender.
  5. Add rice and stir-fry for 2 minutes.
  6. Mix in cooked eggs and protein.
  7. Season with soy sauce, sesame oil, salt, and pepper.
  8. Stir-fry for another 2 minutes and serve hot.

Notes

  • Use cold rice for best texture.
  • Adjust soy sauce to taste.
