Instructions

  1. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  2. Add the diced onion, garlic, and bell pepper to the skillet. Sauté until the vegetables are tender.
  3. Stir in the diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.
  4. Add the cooked rice or quinoa to the skillet and mix well.
  5. Let the mixture cool completely before portioning it into freezer-safe containers or bags.
  6. If using, top each portion with shredded cheese before sealing.
