- 2 lbs ground beef or turkey
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans (15 oz each) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 cups cooked rice or quinoa
- 1 cup shredded cheese (optional)
Instructions
- In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
- Add the diced onion, garlic, and bell pepper to the skillet. Sauté until the vegetables are tender.
- Stir in the diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.
- Add the cooked rice or quinoa to the skillet and mix well.
- Let the mixture cool completely before portioning it into freezer-safe containers or bags.
- If using, top each portion with shredded cheese before sealing.
- Label and date the containers, then freeze for up to 3 months.
Notes
- To reheat, thaw in the refrigerator overnight and heat on the stovetop or in the microwave until warmed through.
- Feel free to customize with your favorite vegetables or spices.
