- 2 tbsp olive oil
- 1 large onion, sliced
- 4 carrots, chopped
- 4 potatoes, cubed
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat your oven to 325°F.
- Heat olive oil in a dutch oven over medium-high heat.
- Sear the roast on all sides until browned.
- Remove the roast and sauté onions, carrots, and garlic for 3 minutes.
- Return the roast to the pot and add potatoes, broth, salt, pepper, and thyme.
- Cover and roast in the oven for 3 hours.
- Let rest for 10 minutes before serving.
