A simple and delicious vegetarian Indian dinner recipe.
Ingredients

- 1 cup basmati rice
- 2 cups water
- 1 tablespoon vegetable oil
- 1 teaspoon cumin seeds
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 cup mixed vegetables (carrots, peas, beans)
- 1 teaspoon garam masala
- Salt to taste
Instructions
- Rinse the basmati rice under cold water.
- In a pot, heat the oil and add cumin seeds.
- Add chopped onions and sauté until golden brown.
- Add tomatoes and cook until soft.
- Add mixed vegetables and stir for a few minutes.
- Add the rinsed rice, water, garam masala, and salt.
- Bring to a boil, then reduce heat and cover.
- Cook for about 15 minutes or until rice is done.
- Fluff the rice with a fork and serve hot.
Notes
- Feel free to use any vegetables you have on hand.
- Adjust spices according to your taste.
