Ingredients

- 1 cup brown rice
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, chopped
- 1 can black beans, rinsed
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a pot, combine brown rice and water. Bring to a boil.
- Reduce heat and simmer for 30 minutes until rice is tender.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic. Sauté until soft.
- Add bell pepper and zucchini. Cook until tender.
- Stir in black beans, cumin, salt, and pepper.
- Combine vegetable mixture with cooked rice.
- Serve warm.
Notes
- Feel free to add your favorite vegetables.
- Can substitute brown rice with quinoa.
- Store leftovers in the fridge for up to three days.
