  • Salt and pepper to taste

Instructions

  1. In a pot, combine brown rice and water. Bring to a boil.
  2. Reduce heat and simmer for 30 minutes until rice is tender.
  3. In a skillet, heat olive oil over medium heat.
  4. Add onion and garlic. Sauté until soft.
  5. Add bell pepper and zucchini. Cook until tender.
  6. Stir in black beans, cumin, salt, and pepper.
  7. Combine vegetable mixture with cooked rice.
  8. Serve warm.

  • Can substitute brown rice with quinoa.
