A simple and quick dinner meal prep that saves time during the week.


Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and let simmer for 15 minutes or until quinoa is cooked.
  4. In a large bowl, mix black beans, corn, diced bell pepper, cumin, paprika, salt, and pepper.
  5. Add cooked quinoa to the bowl and mix well.
  6. Serve in meal prep containers and garnish with fresh cilantro.

Notes

  • This meal can be stored in the refrigerator for up to 5 days.
  • Feel free to add other vegetables or proteins as desired.
