- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups beef broth
- 1 packet taco seasoning
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add the beef, onion, bell pepper, black beans, corn, diced tomatoes, beef broth, taco seasoning, cumin, and chili powder to the crockpot.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Season with salt and pepper to taste before serving.
Notes
- For a spicier soup, add a diced jalapeño.
- Top with shredded cheese, sour cream, or avocado before serving.
- This soup freezes well for later meals.
