- 4 chicken thighs
- 4 chicken drumsticks
- 1 cup red wine
- 1 cup chicken broth
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 2 carrots, sliced
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place chicken thighs and drumsticks in the crockpot.
- Add mushrooms, onion, carrots, and garlic.
- Pour in red wine and chicken broth.
- Stir in tomato paste, thyme, bay leaf, salt, and pepper.
- Cover and cook on low for 6 hours.
- Remove bay leaf before serving.

- Use dry red wine for best flavor.
- Serve with mashed potatoes or crusty bread.
