Description
A simple and healthy crock pot meal that combines chicken with a variety of vegetables for a nutritious dinner.
Ingredients

- 4 boneless, skinless chicken breasts
- 2 cups of carrots, chopped
- 2 cups of broccoli florets
- 1 cup of bell peppers, chopped
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 cup of low-sodium chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Place the chicken breasts at the bottom of the crock pot.
- Add the chopped carrots, broccoli, bell peppers, onion, and garlic on top of the chicken.
- Pour the chicken broth over the vegetables and chicken.
- Sprinkle thyme, oregano, salt, and pepper over the top.
- Cover the crock pot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and vegetables are tender.
- Shred the chicken with two forks and mix everything together before serving.
Notes
- Feel free to add any other vegetables you like, such as zucchini or green beans.
- Serve with brown rice or quinoa for a complete meal.
