Description

A simple and healthy crock pot meal that combines chicken with a variety of vegetables for a nutritious dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups of carrots, chopped
  • 2 cups of broccoli florets
  • 1 cup of bell peppers, chopped
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 cup of low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add the chopped carrots, broccoli, bell peppers, onion, and garlic on top of the chicken.
  3. Pour the chicken broth over the vegetables and chicken.
  4. Sprinkle thyme, oregano, salt, and pepper over the top.
  5. Cover the crock pot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and vegetables are tender.
  6. Shred the chicken with two forks and mix everything together before serving.

Notes

  • Feel free to add any other vegetables you like, such as zucchini or green beans.
  • Serve with brown rice or quinoa for a complete meal.
