Ingredients

- 8 ounces of rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper, diced
- 1/2 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, bell pepper, black olives, and parsley.
- Pour the Italian dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 10 minutes before serving for the best flavor.
