- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 cup beef broth
- 2 carrots, chopped
- 2 potatoes, chopped
- 1 onion, sliced
Instructions
- Preheat oven to 325°F.
- Season chuck roast with salt, pepper, garlic powder, onion powder, and paprika.
- Heat olive oil in a Dutch oven over medium-high heat.
- Sear the roast on all sides until browned.
- Add beef broth, carrots, potatoes, and onion around the roast.
- Cover and bake for 3-4 hours until tender.
- Remove from oven and let rest for 10 minutes before slicing.
Notes
- Use a meat thermometer to ensure internal temperature reaches 200°F for best tenderness.
- For extra flavor, add herbs like rosemary or thyme.
