Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 4 corn tortillas, cut into strips
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until softened.
  3. Add chicken breasts, diced tomatoes, chicken broth, cumin, chili powder, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove chicken, shred it, and return to the pot.
  6. Fry tortilla strips in hot oil until crispy.
  7. Serve soup topped with tortilla strips, avocado, cilantro, and a squeeze of lime.
