Description

A simple and delicious chicken taco soup.


Ingredients

  • 1 pound of chicken breast
  • 1 can of black beans, drained
  • 1 can of corn, drained
  • 1 can of diced tomatoes
  • 1 packet of taco seasoning
  • 4 cups of chicken broth
  • 1 cup of diced onion
  • 1 cup of bell pepper, diced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the diced onion and bell pepper. Sauté until soft.
  3. Add the chicken breast and cook until browned.
  4. Add the black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Season with salt and pepper to taste.
  8. Serve hot.
