Description
A simple and delicious chicken taco soup.
Ingredients

- 1 pound of chicken breast
- 1 can of black beans, drained
- 1 can of corn, drained
- 1 can of diced tomatoes
- 1 packet of taco seasoning
- 4 cups of chicken broth
- 1 cup of diced onion
- 1 cup of bell pepper, diced
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the diced onion and bell pepper. Sauté until soft.
- Add the chicken breast and cook until browned.
- Add the black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- This soup can be made in a slow cooker.
- Add toppings like cheese and avocado for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
