Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs
  • 1/4 cup (60ml) plain yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Pita bread for serving
  • Fresh vegetables (lettuce, tomatoes, cucumbers) for serving
  • Garlic sauce or tahini for drizzling

Instructions

  1. In a bowl, mix together yogurt, olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, salt, and pepper.
  2. Add the chicken thighs to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off.
  4. Grill the chicken for about 6-7 minutes on each side, or until cooked through and internal temperature reaches 165°F (75°C).
  5. Once cooked, remove from the grill and let it rest for a few minutes before slicing it into thin strips.
  6. Serve the sliced chicken in warm pita bread with fresh vegetables and a drizzle of garlic sauce or tahini.

Notes

  • This recipe can also be made using chicken breasts if preferred.
  • Feel free to add your favorite toppings, such as pickles or olives.
  • For extra flavor, you can add a pinch of sumac to the vegetables.
