- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 cup all-purpose flour
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Pound chicken breasts to an even thickness.
- Season chicken with salt and pepper.
- Dredge chicken in flour, dip in beaten egg, then coat with breadcrumb-Parmesan mixture.
- Heat olive oil in a skillet over medium heat.
- Cook chicken until golden brown, about 3-4 minutes per side.
- Place chicken in a baking dish.
- Top each piece with marinara sauce and mozzarella cheese.
- Bake for 15-20 minutes until cheese melts and chicken cooks through.
Notes
- Use fresh mozzarella for better melting.
- Serve with pasta or a side salad.
- Leftovers keep well refrigerated for up to 3 days.
