Description

A comforting and hearty chicken noodle soup that’s perfect for cold days or when you need a quick, nourishing meal.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breast
  • 8 cups (2 liters) chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 cups (200g) egg noodles
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Add garlic and cook for 1 more minute.
  4. Pour in chicken broth and add bay leaf, salt, and pepper. Bring to a boil.
  5. Add chicken breast and simmer for 15-20 minutes until cooked through.
  6. Remove chicken, shred it, and return to the pot.
  7. Add noodles and cook for 8-10 minutes until tender.
  8. Stir in parsley and remove bay leaf before serving.

Notes

  • Use leftover rotisserie chicken for a quicker version.
  • Store leftovers in the fridge for up to 3 days.
  • Freeze without noodles for longer storage.
