Ingredients

- 1 lb (450g) boneless, skinless chicken breast
- 8 cups (2 liters) chicken broth
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 2 cups (200g) egg noodles
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 1 tbsp olive oil
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Add garlic and cook for 1 more minute.
- Pour in chicken broth and add bay leaf, salt, and pepper. Bring to a boil.
- Add chicken breast and simmer for 15-20 minutes until cooked through.
- Remove chicken, shred it, and return to the pot.
- Add noodles and cook for 8-10 minutes until tender.
- Stir in parsley and remove bay leaf before serving.
Notes
- Use leftover rotisserie chicken for a quicker version.
- Store leftovers in the fridge for up to 3 days.
- Freeze without noodles for longer storage.
