  • 4 boneless, skinless chicken
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tbsp chopped fresh parsley

Instructions

  1. Pound chicken to an even thickness.
  2. Mix flour, salt, and pepper in a shallow dish.
  3. Dredge chicken in the flour mixture.
  4. Heat olive oil and butter in a large skillet over medium heat.
  5. Cook chicken for 5-6 minutes per side until golden brown.
  6. Remove chicken and set aside.
  7. Add mushrooms to the skillet and sauté for 4-5 minutes.
  8. Pour in Marsala wine and chicken broth, scraping the browned bits from the pan.
  9. Simmer for 5 minutes until slightly reduced.
  10. Stir in heavy cream and return chicken to the skillet.
  11. Cook for 2-3 minutes until heated through.
  12. Sprinkle with fresh parsley before serving.
