- 4 boneless, skinless chicken
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz sliced mushrooms
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 tbsp chopped fresh parsley
Instructions
- Pound chicken to an even thickness.
- Mix flour, salt, and pepper in a shallow dish.
- Dredge chicken in the flour mixture.
- Heat olive oil and butter in a large skillet over medium heat.
- Cook chicken for 5-6 minutes per side until golden brown.
- Remove chicken and set aside.
- Add mushrooms to the skillet and sauté for 4-5 minutes.
- Pour in Marsala wine and chicken broth, scraping the browned bits from the pan.
- Simmer for 5 minutes until slightly reduced.
- Stir in heavy cream and return chicken to the skillet.
- Cook for 2-3 minutes until heated through.
- Sprinkle with fresh parsley before serving.
Notes
- Use dry Marsala wine for best flavor.
- Serve with pasta or mashed potatoes.
- Thinly sliced shallots can be added with the mushrooms.
