Description

A quick and easy chicken fried rice recipe packed with flavor and ready in minutes. Perfect for using leftover rice and chicken.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup cooked chicken, diced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • 2 green onions, chopped

Instructions

  1. Heat 1 tbsp oil in a large pan or wok over medium-high heat.
  2. Add beaten eggs and scramble until cooked. Remove and set aside.
  3. Add remaining oil to the pan. Sauté garlic for 30 seconds.
  4. Add mixed vegetables and stir-fry for 2 minutes.
  5. Add diced chicken and cook for 1 minute.
  6. Stir in rice, soy sauce, sesame oil, and black pepper. Mix well.
  7. Add scrambled eggs back to the pan and combine.
  8. Garnish with green onions and serve hot.

Notes

  • Use cold, day-old rice for best texture.
  • Substitute any protein or vegetables as preferred.
