A quick and easy chicken fried rice recipe packed with flavor and ready in minutes. Perfect for using leftover rice and chicken.
Ingredients

- 2 cups cooked rice (preferably day-old)
- 1 cup cooked chicken, diced
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp black pepper
- 2 green onions, chopped
Instructions
- Heat 1 tbsp oil in a large pan or wok over medium-high heat.
- Add beaten eggs and scramble until cooked. Remove and set aside.
- Add remaining oil to the pan. Sauté garlic for 30 seconds.
- Add mixed vegetables and stir-fry for 2 minutes.
- Add diced chicken and cook for 1 minute.
- Stir in rice, soy sauce, sesame oil, and black pepper. Mix well.
- Add scrambled eggs back to the pan and combine.
- Garnish with green onions and serve hot.
Notes
- Use cold, day-old rice for best texture.
- Substitute any protein or vegetables as preferred.
- Adjust soy sauce to taste.
