- 2 large eggs
- 2 tablespoons water

- 1/2 cup dry white wine
- 1 cup chicken broth

- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Pound chicken breasts to an even thickness.
- Season chicken with salt and pepper.
- Dredge chicken in flour, shaking off excess.
- Whisk eggs with water in a shallow bowl.
- Dip floured chicken into egg mixture.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken until golden brown, about 3-4 minutes per side.
- Remove chicken and set aside.
- Deglaze pan with white wine, scraping up browned bits.
- Add chicken broth and lemon juice.
- Simmer sauce until slightly reduced.
- Whisk in butter until melted.
- Return chicken to pan and coat with sauce.
- Sprinkle with parsley before serving.
