- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 flour tortillas
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Mix chicken, black beans, corn, salsa, sour cream, chili powder, cumin, garlic powder, salt, and pepper in a bowl.
- Layer half the tortillas in a baking dish.
- Spread half the chicken mixture over the tortillas.
- Sprinkle half the cheese on top.
- Repeat layers with remaining tortillas, chicken mixture, and cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
Notes
- Use rotisserie chicken for quick prep.
- Add diced jalapeños for extra heat.
- Store leftovers in the fridge for up to 3 days.
