Easy cheesy ground beef enchiladas made in one pan for a quick and delicious meal.

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 flour tortillas
- 1 can (10 oz) enchilada sauce
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 clove garlic, minced
- 1 tbsp olive oil
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and garlic. Cook until softened.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning and 1/2 cup enchilada sauce. Mix well.
- Warm tortillas slightly for easier rolling.
- Fill each tortilla with beef mixture and a sprinkle of cheese. Roll tightly and place seam-side down in the pan.
- Pour remaining enchilada sauce over the top. Sprinkle with remaining cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
Notes
- Use corn tortillas for a gluten-free option.
- Adjust spice level with mild or hot taco seasoning.
- Top with sour cream, avocado, or cilantro before serving.
