- 1 onion, diced
- 1 packet taco seasoning
- 1 can (10 oz) red enchilada sauce
- 8 small flour tortillas
- 2 cups shredded cheddar cheese
- 1 can (4 oz) diced green chiles
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 375°F.
- Brown the ground beef with onions in a large skillet over medium heat.
- Drain excess fat and stir in taco seasoning.
- Pour half the enchilada sauce into a baking dish.
- Fill each tortilla with beef mixture, cheese, and green chiles, then roll up.
- Place enchiladas seam-side down in the baking dish.
- Top with remaining enchilada sauce and cheese.
- Bake for 20 minutes until cheese melts.
- Garnish with sour cream and cilantro before serving.
