Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 can (10 oz) enchilada sauce
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • 1 tbsp vegetable oil

Instructions

  1. Preheat oven to 375°F.
  2. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  3. Add taco seasoning and 1/4 cup water to the beef. Simmer for 5 minutes.
  4. Warm tortillas in a dry skillet or microwave for easier rolling.
  5. Fill each tortilla with beef mixture and a sprinkle of cheese. Roll tightly.
  6. Place enchiladas seam-side down in a baking dish. Pour enchilada sauce over them.
  7. Top with remaining cheese and bake for 20 minutes or until bubbly.
  8. Garnish with onions and cilantro before serving.
