- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 8 small tortillas

- 1 avocado, diced
- 1 cup lettuce, shredded
- Sour cream, for serving (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
- Add black beans, corn, and taco seasoning to the skillet. Stir to combine and cook for 5 minutes until heated through.
- Warm the tortillas in a separate skillet or microwave until pliable.
- Assemble the tacos by adding a generous scoop of the meat mixture to each tortilla.
- Top with shredded cheese, salsa, diced avocado, and lettuce.
- Serve with sour cream if desired.
