Ingredients

  • 1 lb ground beef
  • 1 lb ground turkey
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Tortillas or taco shells for serving
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and red bell pepper; sauté until softened, about 5 minutes.
  3. Add ground beef and ground turkey to the skillet. Cook until browned and cooked through, about 8-10 minutes.
  4. Stir in cooked rice, black beans, corn, and taco seasoning. Mix well to combine.
  5. Cook for an additional 5-7 minutes until everything is heated through. Season with salt and pepper to taste.
  6. Remove from heat and stir in shredded cheese until melted.
  7. Serve warm in tortillas or taco shells, garnished with cilantro if desired.
