- 1 lb ground beef
- 1 lb ground turkey
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 large onion, diced
- 1 red bell pepper, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Tortillas or taco shells for serving
- Chopped fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and red bell pepper; sauté until softened, about 5 minutes.
- Add ground beef and ground turkey to the skillet. Cook until browned and cooked through, about 8-10 minutes.
- Stir in cooked rice, black beans, corn, and taco seasoning. Mix well to combine.
- Cook for an additional 5-7 minutes until everything is heated through. Season with salt and pepper to taste.
- Remove from heat and stir in shredded cheese until melted.
- Serve warm in tortillas or taco shells, garnished with cilantro if desired.
