- 2 boneless, skinless chicken breasts
- 1 cup white rice
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with Cajun seasoning, salt, and pepper.
- Cook chicken until browned, about 5-6 minutes per side. Remove and set aside.
- In the same skillet, sauté onion, bell pepper, and garlic until softened.
- Add rice and stir to coat with oil.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
- Slice chicken and return to skillet. Stir well.
- Serve hot.

- Adjust Cajun seasoning to taste.
- Use brown rice for a healthier option—increase cooking time accordingly.
