- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
- 12 oz semi-sweet chocolate chips
- 1 tablespoon vegetable shortening
Instructions
- Mix peanut butter, butter, and vanilla in a bowl until smooth.
- Gradually add powdered sugar until fully combined.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Freeze the balls for 30 minutes.
- Melt chocolate chips and shortening in a double boiler or microwave, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate, leaving a small portion uncovered to resemble a buckeye.
- Place back on the baking sheet and refrigerate until firm.
Notes
- Use a toothpick to dip the balls for easier handling.
- Store buckeyes in an airtight container in the refrigerator.
